Oatmeal Pancakes 2

2 cups old fashioned oatmeal
2 1/2 cups buttermilk
2 eggs, lightly beaten
1/4 cup butter or margarine, melted and cooled
1/2 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon saltRecipe
Combine the oat and buttermilk and let set for 15 to 30 minutes. Add eggs and butter. Stir well. Add flour, sugar, baking powder, baking soda and salt. Stir gently Let rise for 10 minutes. Cook on a medium hot grill. I use a 1/4-cup measuring up to ladle onto the grill. Perfect size every time. Serve warm with maple syrup or strawberry butter.
Sue's notes: I use the powdered buttermilk that I keep in the fridge.
