Cake- Apple Cake with Orange Glaze
List of Ingredients
- 1 1/2 cups salad oil
- 2 cups sugar
- 3 eggs
- 3 cups unsifted all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon grated orange peel
- 3 cups diced, unpeeled cooking apples (about 4 or 5 medium apples)
- 1 cup chopped walnuts
- Glaze
- 1 cup confectioner's sugar
- 1 1/2 tablespoons butter or margarine, softened
- 1 teaspoon grated orange peel
- 2 to 3 tablespoon orange juice
- 1 tablespoon light corn syrup
Instructions
- Preheat oven to 350 degrees F. Grease and flour a 12-cup Bundt or 10-inch tube pan; set aside.
- In large mixer bowl with electric mixer at medium speed, beat oil and sugar for 1 minute.
- Add eggs and beat another minute.
- In medium bowl combine flour, baking soda and salt. Add to oil mixture and continue beating until well combined.
- Add remaining ingredients and stir to blend. (Mixture will be very thick.)
- Spoon batter evenly in pan and smooth top. Bake 1 hour 15 minutes or until a toothpick inserted in cake comes out clean. Cool cake in pan on wire rack for 20 minutes.
- Remove cake from pan and cool completely on rack before glazing.
- Glaze: In small bowl combine all glaze ingredients. Makes about 20 servings.
