Cake- Lyons Carrot Cake
List of Ingredients
- 2 cups flour
- 1 1/2 teaspoons soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 cups sugar
- 1 1/2 cups oil
- 4 eggs, beaten
- 1 ( 8 1/4-ounce ) can crushed pineapple, drained
- 2 cups grated carrots
- 1/2 cup raisins
- 1/2 cup walnuts, chopped
- Cream Cheese Frosting
- 1 pound powdered sugar
- 1/2 cup butter
- 1 (8 ounce) package cream cheese, room temperature
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees F. Grease a 13 x 9 x 2-inch baking pan. In a large mixing bowl; sift together flour, baking powder, soda, salt, cinnamon, nutmeg and sugar. Make a well in center.
- Add oil, eggs, drained pineapple, carrots, raisins and walnuts. Mix well and turn into prepared pan.
- Bake at 350 degrees F. for 1 hour. Cool.
- Make Frosting; Blend together all ingredients until smooth.
Final Comments
For frosing can use 1/2 teaspoon vanilla and 1/2 teaspoon lemon extract
