    Cake- Lyons Carrot Cake


    List of Ingredients


    • 2 cups flour
    • 1 1/2 teaspoons soda
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 1 teaspoon cinnamon
    • 1 teaspoon nutmeg
    • 2 cups sugar
    • 1 1/2 cups oil
    • 4 eggs, beaten
    • 1 ( 8 1/4-ounce ) can crushed pineapple, drained
    • 2 cups grated carrots
    • 1/2 cup raisins
    • 1/2 cup walnuts, chopped
    • Cream Cheese Frosting
    • 1 pound powdered sugar
    • 1/2 cup butter
    • 1 (8 ounce) package cream cheese, room temperature
    • 1 teaspoon vanilla


    Instructions


    1. Preheat oven to 350 degrees F. Grease a 13 x 9 x 2-inch baking pan. In a large mixing bowl; sift together flour, baking powder, soda, salt, cinnamon, nutmeg and sugar. Make a well in center.
    2. Add oil, eggs, drained pineapple, carrots, raisins and walnuts. Mix well and turn into prepared pan.
    3. Bake at 350 degrees F. for 1 hour. Cool.
    4. Make Frosting; Blend together all ingredients until smooth.


    Final Comments


    For frosing can use 1/2 teaspoon vanilla and 1/2 teaspoon lemon extract
