    2 cups sugar
    2/3 cup half and half
    ¼ cup corn syrup
    1 (1-ounce square) unsweetened chocolate*
    1/4 cup butter or margarine
    2 teaspoons vanilla

    Recipe



    Combine sugar, half and half, corn syrup and chocolate in a Dutch oven; cook over low heat stirring gently until sugar dissolves. Cover chocolate mixture cook over medium heat 2 to 3 minutes to wash down sugar crystals from the side of the pan. Uncover and cook over to soft ball stage (238), stirring occasionally.
    Remove chocolate mixture from heat; add vanilla and butter. (Do NOT stir) Cool to lukewarm (110); beat with a wooden spoon until mixture thickens and begins to lose its gloss. Pour mixture into a buttered 8-inch square pan. Cool and cut into squares. About 1 1/4 pounds.
    *I’ve been using 1 and 1/4 ounce of unsweetened chocolate. I never have half and half in the house…I improvise with cream and/milk. I think the 8-inch pan is too big I use a loaf pan lined with plastic wrap and buttered.
