Bar- Peanut Butter Jam Bars
List of Ingredients
- 1/2 cup butter or margarine, softened
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1/2 cup chunky peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cup all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 2 cups peanut butter morsels, divided use
- 1 cup strawberry jam
Instructions
- Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add peanut butter, egg, and vanilla, mixing well.
- Combine flour, soda, and baking powder; gradually add to butter mixture, mixing well. Reserve 1 cup dough.
- Stir 1 cup peanut butter morsels into remaining dough; press in bottom of a 13- x 9- x 2-inch baking pan. Spread jam evenly over dough. Crumble reserved dough over jam, and sprinkle with remaining peanut butter morsels.
- Bake at 325 degrees F for 40 minutes or until golden. Cool completely in pan on a wire rack, and cut into bars. Cookies may be frozen up to 3 months. Yield about 3 dozen.
