Bar- Cherry Cheesecake Bars
List of Ingredients
- 6 tablespoons butter
- 1/2 cup light brown sugar, packed
- 1 cup flour
- 3/4 cup toasted almonds, chopped
- 1 cup cherry preserves
- 8 tablespoons granulated sugar
- 1 (8-ounce) package cream cheese, softened
- 1 egg
- 2 tablespoons milk
- 1/2 teaspoon almond extract
Instructions
- Preheat oven to 350 degrees F. For crust: cream butter and brown sugar together in mixing bowl. Add flour and almonds and blend, mixture should be crumbly.
- Reserve 1/2 cup crumbs. Press remaining crumbs into a greased 8-inch square baking pan.
- Bake at 350 degrees F for 12 to 15 minutes or until crust is golden. Cool slightly. Spread preserves over crust.
- In medium bowl, cream together cream cheese and sugar. Blend in egg, milk and almond extract. Spread filling over preserves. Sprinkle with the reserved crumbs.
- Return to oven and bake for 20 more minutes Cool in pan. Cut into bars, place on serving plate, wrap in plastic wrap. Store bars in the refrigerator. Bakes 12 to 16 bars.
Final Comments
Instead of cherry preserves I've use 1 cup of canned cherry pie filling but I cut up the cherries.
