    Bar- Fruit Crumb Bars

    List of Ingredients




    2 1/2 cups all-purpose flour
    2 1/2 cups quick-cooking rolled oats
    1 1/2 cup packed brown sugar
    1/4 teaspoon baking soda
    1 1/2 cups margarine or butter, melted
    1 21- to 24- ounce can apple, apricot, blueberry, cherry, peach, or raisin pie filling; or 2 cups prepared mincemeat
    1 teaspoon finely shredded lemon or orange peel

    Powdered-Sugar Icing
    1 cup sifted powdered sugar
    1/4 teaspoon vanilla or several drops almon extract
    1 to 2 tablespoons milk

    Recipe



    -Stir together flour, oats, brown sugar, and baking soda in a large mixing bowl. Stir in melted margarine or butter till well combined. Reserve 2 cups of the oat mixture for topper.
    -Pat the remaining oat mixture into an ungreased 15 x 10 x 1-inch baking pan. Bake in a 350 degree over for 12 minutes
    -Snip and large pieces of fruit in pie filling. Stir lemon or orange peel into pie filling or mincemeat. Carefully spread filling mixture on top of hot baked crust. Sprinkle with the reserved oat mixture. Slightly pat oat mixture into filling.
    -Bake in the 350 degree oven for 20 to 25 minutes more or till top is golden. Cool in pan on a rack. Drizzle with Powdered-Sugar Icing. Cut into bars. Makes 50

    Powdered-Sugar Icing
    In a small mixing bowl stir together powdered sugar, vanilla or almond extract, and enough milk to make of desired consistency. Makes about 1/3 cup
