    Bar- Oatmeal Date Bars


    List of Ingredients


    • 2 cups pitted dates, chopped
    • 1 teaspoon freshl grated orange rind
    • 1/2 cup fresh orange juice
    • 2 sticks (1 cup) unsalted butter, cut into bits, and softened
    • 1 1/4 cups all-purpose flour
    • 3/4 cup firmly packed light brown sugar
    • 1/4 cup granulated sugar
    • 2 1/2 cups old-fashioned rolled oats
    • 1/2 teaspoon salt


    Instructions


    1. In a heavy saucepan combine the dates, the rind, the orange juice, and 1/2 cup water, bring the mixture to a boil, mashing the dates with a fork,and simmer the mixture, stirring and mashing it with the fork, for 3 minutes.
    2. Remove the pan from the heat and let the puree cool.
    3. In a bowl combine the butter, flour, sugars, oats and salt and blend the mixture well with your fingers.
    4. Press half the oatmeal mixture evenly in a greased 13 x 9 x 2-inch baking pan, spread the date puree over it, and top it with the remaining oatmeal mixture, spreading and pressing it to form an even layer.
    5. Bake the mixture in the middle of a preheated 375 degree F oven for 40 minutes, or until it is golden, let it cool completely in the pan on a rack, and cut it into bars.
