Bar- Oatmeal Date Bars
List of Ingredients
- 2 cups pitted dates, chopped
- 1 teaspoon freshl grated orange rind
- 1/2 cup fresh orange juice
- 2 sticks (1 cup) unsalted butter, cut into bits, and softened
- 1 1/4 cups all-purpose flour
- 3/4 cup firmly packed light brown sugar
- 1/4 cup granulated sugar
- 2 1/2 cups old-fashioned rolled oats
- 1/2 teaspoon salt
Instructions
- In a heavy saucepan combine the dates, the rind, the orange juice, and 1/2 cup water, bring the mixture to a boil, mashing the dates with a fork,and simmer the mixture, stirring and mashing it with the fork, for 3 minutes.
- Remove the pan from the heat and let the puree cool.
- In a bowl combine the butter, flour, sugars, oats and salt and blend the mixture well with your fingers.
- Press half the oatmeal mixture evenly in a greased 13 x 9 x 2-inch baking pan, spread the date puree over it, and top it with the remaining oatmeal mixture, spreading and pressing it to form an even layer.
- Bake the mixture in the middle of a preheated 375 degree F oven for 40 minutes, or until it is golden, let it cool completely in the pan on a rack, and cut it into bars.
