Fresh Peach Crisp
List of Ingredients
- 2 1/2 pounds fresh ripe peaches (about 8)
- 1 cup all purpose four
- 1 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup soft butter or margarine
- Light cream, to serve it with, if desired
Instructions
- Preheat oven to 375 degrees F. Lightly grease an 8 x 8 x 2-inch baking dish.
- Wash peaches; peel. Cut in halves; remove pits. Slice peaches into prepared baking dish.
- Sift flour with sugar, salt, and cinnamon into a medium bowl.
- With pastry blender or 2 knives, cut butter into flour mixture until mixture resembles coarse cornmeal. Sprinkle evenly over peaches.
- Bake 45 to 50 minutes, or until topping is golden and peaches are tender.
- Serve warm, with cream, if desired.
Final Comments
I often double the amount of crumb mixture and increase the amount of peaches and bake in a 13 x 9 x 2-inch pan (takes about 12 to 14 peaches).
