    Porcupine Meatballs


    List of Ingredients


    • 1 pound ground beef
    • 1/2 pound ground lean pork
    • 1 small onion, minced
    • 1/2 cup uncooked rice
    • 1/2 cup cracker crumbs
    • 1 egg, lightly beaten
    • Salt and ground black pepper, to taste
    • 1 (10 1/2 ounces) can condensed tomato soup


    Instructions


    1. Preheat oven to 375 degrees F. In a large bowl combine meat, onion, rice, cracker crumbs, egg, and seasonings. (This is easiest to do using hands).
    2. Shape into balls about the size of golf balls and place into a well-greased casserole.
    3. Dilute the tomato soup with 1 can of water. Pour the diluted soup over the meatballs, cover the casserole, and put in the oven.
    4. Bake for about 1 hour. When done, the rice has swollen and sticks out of the meatballs. Serve with soup over top.


    Final Comments


    The oven temperature can be played with if using the oven for more things- just add or subtract from cooking time. A little chili powder, or "essence" works well here.
