Pork Sate w/ Cashew Yogurt Dipping Sauce
List of Ingredients
- 1 cup plain yogurt
- 2 tablespoon fresh mild green chilies
- 1 tablespoon salt
- 1 1/2 teaspon minced fresh ginger root
- 1/2 medium onion, minced
- 2 pounds boneless lean pork, well trimmed, cut into 1" cubes
- Dipping sauce
- 1 cup salted cashews
- 2/3 cup plain yogurt
- 1 to 2 cloves garlic
Instructions
- Combine 1 cup yogurt with chilies, salt minced ginger,and onion. Toss in pork cubes, stir until pork is coated.
- Cover and marinate in refrigerator for about 3 hours.
- Prepare charcoal grill, Drain off most of marinade and discard. Divide meat among 6 skewers.
- Grill to desired doneness.
- Remove from skewers (or serve on skewers, if desired). Serve with Cashew Yogurt Dipping Sauce.
- Sauce: Combine sauce ingredients in a food processor or blender and mix unti almost smooth. (Spread with be very thick, can be thinned with additional yogurt, if desired.)
