Pork or Chicken Filling
List of Ingredients
- 1 1/2 tablespoons salad oil or melted lard
- 1 medium-sized onion, chopped
- 2 cups finely diced or shredded cooked chicken, turkey or lean pork
- 1 small canned jalapeno chile or other pickled hot chile, minced
- 1/4 cup raisins, chopped
- 1 1/2 tablespoon chopped ripe olives
- 2/3 cup Red Chile Sauce, canned or homemade or enchilada sauce
Instructions
- In hot salad oil or lard, saute onion unitl limp.
- Blend in pork, chicken, or turkey,chile, raisins, olives, and sauce.
- Simmer 10 minutes, stirring occasionally. Makes 2 1/2 to 3 cups
