    Green Tagliarini with Four Cheeses


    List of Ingredients


    • 1/2 pound butter
    • 1/4 teaspoon freshly ground white pepper
    • 1/4 pound fontina, cubed
    • 1/4 pound gorgonzola, cubed
    • 1/4 pound bel paese cheese, cubed
    • 3/4 cup freshly grated Parmesan cheese
    • 1 cup heavy
    • 1 pound green tagliarini (or spaghetti)
    • Salt


    Instructions


    1. Melt the butter in a deep saucepan and add the pepper. Add the fontina, gorgonzola and bel paese cheeses. Stir over low heat until the cheeses melt.
    2. Add the heavy cream and Parmesan and stir until blended. Take off heat, keep in a warm place.
    3. Cook the pasta: place the tagliarini into salted, boiling water and cook, stirring occasionally, 7 to 10 minutes, until tender.
    4. Drain pasta, shaking off as much water as possible. Toss the pasta with the sauce and serve.
