Green Tagliarini with Four Cheeses
List of Ingredients
- 1/2 pound butter
- 1/4 teaspoon freshly ground white pepper
- 1/4 pound fontina, cubed
- 1/4 pound gorgonzola, cubed
- 1/4 pound bel paese cheese, cubed
- 3/4 cup freshly grated Parmesan cheese
- 1 cup heavy
- 1 pound green tagliarini (or spaghetti)
- Salt
Instructions
- Melt the butter in a deep saucepan and add the pepper. Add the fontina, gorgonzola and bel paese cheeses. Stir over low heat until the cheeses melt.
- Add the heavy cream and Parmesan and stir until blended. Take off heat, keep in a warm place.
- Cook the pasta: place the tagliarini into salted, boiling water and cook, stirring occasionally, 7 to 10 minutes, until tender.
- Drain pasta, shaking off as much water as possible. Toss the pasta with the sauce and serve.
