Cracker Barrel Hash Brown Casserole

2 pounds frozen hash potatoes -- thaw
1/2 cup butter -- melt
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup onion -- chopped fine
1 can cream of chicken soup
2 cups Colby cheese -- grated
Seasoned Corn Flakes Topping
(1 cup corn flakes, 2 T butter, season salt, garlic and onion powder, cayenne pepper---Melt butter in a skillet toss in corn flakes season to taste with seasonings listed or of your own choosing)
Recipe
Preheat oven at 350F. Spray a 9x13 baking pan with non-stick cooking spray.
Melt butter, over low heat, cook onions in butter until translucent.
Combine soup, butter/onion, salt, pepper, and cheese.
Gently mix in the potatoes and pour into prepared pan or dish.
Top with seasoned corn flakes.
Bake uncovered at 350F for 35 minutes.
