Green Bean, Walnut and Feta Salad

List of Ingredients
1 1/2 pounds green beans, halved
1 cup chopped toasted walnuts
1 cup diced red onions
1 cup crumbled feta cheese
Mint Dressing
3/4 cup olive oil
1/2 cup chopped mint
1/4 cup white wine vinegar
3/4 teaspoon salt
1/2 teaspoon minced garlic
1/4 teaspoon pepper
Recipe
For the salad:
Place the beans in a large saucepan of boiling water and cook for 4 minutes. Drain immediately and rinse under cold water until cool. Pat dry and chill. To serve, arrange the beans on a platter. Sprinkle with the nuts, onions, and cheese. Just before serving, add the dressing and toss.
For the dressing:
Combine all of the ingredients and blend well.
