    Salad- Spinach and Endive Salad w/ Blue Cheese/Walnut Dressing


    List of Ingredients


    • 1/4 cup red-wine vinegar
    • 1/2 cup plus 1 tablespoon good quality olive oil
    • 1/4 cup plus 2 tablespoons crumbled blue cheese
    • 3/4 cup walnuts, lightly toasted and chopped
    • 6 cups spinach leaves, thoroughly washed and spun dry
    • 3 small Belgian endives, trimmed and sliced thin crosswise


    Instructions


    1. In a blender add the vinegar, the oil, blue cheese, around half the walnuts, salt and pepper (to taste); blend the dressing until smooth.

    2. In a salad bowl toss the spinach, endive, and remaining walnuts with the dressing until the salad is well combined.

    3. Serves 6
