    1/2 cup finely chopped onion
    2 tablespoons butter or margarine, melted
    1 (10 3/4-ounce) can cream of chicken soup
    1/2 cup half-and-half
    1 tablespoon lemon juice
    1 teaspoon curry powder
    1/2 teaspoon ground ginger (optional)

    Suate onion in butter in a saucepan. Stir in soup and next 4 ingredients; cook over medium heat until thoroughly heate, stirring occasionally.

    Serving suggestion: Plate rice, top with cooked chicken, lap sauce over top. If desired serve with toasted coconut, chutney, raisins, sliced green onions, or peanuts. Yield: about 2 cups
