    Enchilada Sauce-Easy


    List of Ingredients


    • 1 medium size onion, finely chopped
    • 2 tablespoons salad oil
    • 3 1/2 cups tomato puree
    • 2 cloves garlic, finely minced
    • 4 tablespoons chile powder
    • 1/2 teaspoon ground cumin
    • 1/4 teaspoon dried oregano powder


    Instructions


    1. Saute onion and garlic in salad oil just until limp and translucent. Add tomato puree.
    2. Gradually stir in chile powder, cumin, oregano and salt.
    3. Cover and simmer at least 30 minutes, stirring frequently.
    4. Strain through a medium-fine wire strainer, if desired. Makes about 3 cups.
