Madeira Sauce
List of Ingredients
- 1 tablespoon butter
- 4 large mushrooms, sliced
- Salt and freshly ground pepper
- 2 tablespoons finely chopped shallots
- 1/3 cup Madeira
- 1 1/2 cups Brown Sauce or 1 can (10 3/4 ounce) beef gravy
Instructions
- Heat the butter in a skillet and add the mushrooms. Sprinkle with salt and pepper to taste and cook until the mushrooms give up their liquid.
- Add the shallots and cook, stirring, until most of the liquid evaporates.
- Add the wine and cook one minute, then add the brown sauce and simmer fifteen minutes longer.
Final Comments
Good way to use up leftover gravy--chicken and or turkey works too. Chicken with sauteed boneless, skinless chicken breasts.
