Cream of Scallop Soup with Dill
List of Ingredients
5 tablespoons butter
2 tablespoon onion, chopped fine
5 tablespoon flour
4 cups milk
1/2 bay leaf
4 cups cut-up scallops, in 1/4 inch pieces
2 teaspoons chopped fresh dill, or 1 teaspoon dried
Salt and freshly ground pepper to tasteRecipe
Melt the butter in a soup pot over medium heat. Add the onion and cook for about 5 minutes, until soft and translucent. Stir in the flour and cook over low heat for 2 minutes. Stir in the milk, bay leaf, and 1 cup of the scallops and simmer for 5 minutes. Remove the bay leaf. Add the remaining scallops, dill, and salt and pepper to taste and heat thoroughly.
