Green Beans- With Winter Pesto
List of Ingredients
- 3 (10 ounce each) package frozen Italian green beans
- 1/2 cup olive oil or half olive oil and half vegetable oil
- 1 teaspoon salt
- 1 large clove garlic, peeled
- 1/2 cup walnuts, slightly broken up (processor will do rest)
- 1 cup parsley sprigs, packed to measure
- 2 teaspoons dried dillweed
Instructions
- Cook beans according to package directions.
- While beans cook, put oil, salt and garlic in blender or food processor. Cover and blend until garlic is broken up.
- Stop machine; add walnuts, parsley and dill, pushing them well down into the oil mixture. Cover and blend to an almost-smooth puree.
- Toss sauce wth hot, drained green beans. Sauce may be made up to 2 hours ahead. Makes about 4 1/2 cups beans. 8 to 10 servings.
