    Baked Brie With Pesto and Mushrooms

    4 oz. mushrooms, chopped
    1/2 cup seasoned croutons, crushed
    2 tsp. olive oil
    1/4 cup prepared basil pesto
    1 round 8 oz. Brie wheel (4" diameter)

    Recipe



    Saute mushrooms in olive oil 2-3 mins. over med-high heat. Remove from heat and add croutons and basil pesto. Mix gently.
    Cut Brie wheel in 1/2 horizontally. Please rind-side down on non-stick baking dish. Spoon 1/2 mushroom-crouton-pesto
    mixture on bottom 1/2 of Brie - spread evenly.
    Top with the other half of Brie - rind-side up. Spoon rest of mushroom-crouton-pesto mixture over top. Bake 12-15 minutes or until cheese is soft and just begins to melt. Serve with crackers.
