    High in Cholesterol because of the bacon but OH SO GOOD!!!

    List of Ingredients




    1 - 1 1/2 lbs. boneless, skinless bacon, cubed
    2 TBSP. canola or vegetable oil
    2 TBSP. honey
    1/4 cup cider vinegar
    1/4 cup soy sauce
    2 bunches of scallions, chopped fine
    1 - 1/2 lb. bacon slices
    8 oz. can chunk pineapple
    mushrooms caps, washed, if desired (for kabobs)
    large slices of onions, if desired (for kabobs)
    large slices of peppers,if desired (for kabobs)
    cherry tomatoes, washed, if desired (for kabobs)
    Several kabob skewers
    aluminum foil
    empty coffee can or place for grease

    Recipe



    Mix honey, oil, cider vinegar, soy and scallions in container for marinating or large gallon-size plastic bag and add 1 - 1 1/2 lbs. cubed, boneless, skinless chicken breast. Marinate at least 4 hours up until overnight. Wrap
    approxmately 1/2 piece of bacon around marinated, cubed chicken. Skewer bacon-wrapped chicken and alternate with chunks of pineapple, mushrooms, onion and pepper and tomato (whatever your family prefers) (Note: Only chicken is wrapped in bacon). Grill, using low-medium flame with a foil covered surface (grease from bacon will cause flare-ups - PLEASE BE CAREFUL!). Once grease from bacon subsides, carefully remove foil, pouring grease into coffee can. Grill until chicken and all "vegetables" are cooked throughout - don't rush it...YUMMY!!!!!!!!!
