Actually got this from my mother-in-law.

List of Ingredients

4 Large sweet potatoes
1 Cup sugar
1 Tablespoon vanilla extract
1 Stick butter softened.
1 1/2 Cups marshmallows.


Recipe

Peel and cut sweet potatoes.
In a large dutch oven bring potatoes to a boil. If you cover the pot it will boil faster. When the potatoes are fork tender drain in a colander. Then place back in the dutch oven. Whip the soften potatoes with a hand mixer on medium until smooth.
Placed the whipped potatoes into a large casserole dish and smooth the top. Scatter marshmallows over top and place in the oven on broil until the marshmallows are light golden brown and somewhat melted. Remove. You are ready to serve!
