    Chili Cheese Quiche

    From Pat DeHaan. I usually double this recipe and freeze it.


    List of Ingredients


    • 1/2 cup butter
    • 10 eggs
    • 1/2 cup flour
    • 1 t baking powder
    • dash salt
    • 1 8 oz can chpped green chilis, drained
    • 1 pt small curd cottage cheese
    • 1 lb. shredded Jack cheese


    Instructions


    1. Melt butter in 13x9 pan and put in bowl.
    2. Beat eggs lightly in a bowl and blend in flour, baking powder, salt.
    3. Blend into this the melted butter, chilis, cottage cheese, and Jack cheese.
    4. Turn into same 13x9 pan.
    5. Bake at 400* for 15 minutes.
    6. Lower heat to 350* and bake for 35-40 minutes.
    7. Let sit 5-10 minutes.
    8. Cut into squares.


    Final Comments


    Makes about 60 squares.
    May also add another 8 oz. can chilis.
    May be made ahead of time and re-heated.
    Freezes well.
