    Shrimp Stuffed Artichoke Bottoms

    This recipe is from Lakewood Forest Gourmet Club.


    List of Ingredients


    • 1 can artichoke bottoms
    • 3 T. olive oil
    • 1 1/2 T wine vinegar
    • salt and pepper
    • 1 cup boiled shrimp, cut into pieces
    • 1/2 cup finely diced green pepper
    • 1/3 cup mayo
    • 2 t. lemon juice
    • cooked shrimp for garnish, if desired.


    Instructions


    1. Marinate artichoke bottoms in mixture of oil, vinegar, salt and pepper for about an hour.
    2. Mix remaining and put in the artichoke. You might want to cut these in half.
    3. Garnish as desired.
