    List of Ingredients


    • 1 stick butter
    • 1 large leek, the white part
    • 4 plum tomatoes, diced
    • 1/2 cup dry vermouth
    • 8 oz. rigatoni pasta
    • 6 oz. crabmeat (fake works too)
    • 1 T fresh chives
    • salt and pepper to taste


    Instructions


    1. Melt 1 T butter- add leek, cook until tender.
    2. Add tomatoes, cook one minute.
    3. Increase heat, add vermouth, and voil until liquid is reduced by 1/3. Set aside.
    4. Cook and drain pasta.
    5. Bring tomato mixture to simmer.
    6. Whisk in remaining 7 T butter, one at a time.
    7. Add crab, salt, and pepper.
    8. Pour over pasta, top with chives.


    Final Comments


    Makes two servings.
