Rigatoni Alicante
List of Ingredients
- 1 stick butter
- 1 large leek, the white part
- 4 plum tomatoes, diced
- 1/2 cup dry vermouth
- 8 oz. rigatoni pasta
- 6 oz. crabmeat (fake works too)
- 1 T fresh chives
- salt and pepper to taste
Instructions
- Melt 1 T butter- add leek, cook until tender.
- Add tomatoes, cook one minute.
- Increase heat, add vermouth, and voil until liquid is reduced by 1/3. Set aside.
- Cook and drain pasta.
- Bring tomato mixture to simmer.
- Whisk in remaining 7 T butter, one at a time.
- Add crab, salt, and pepper.
- Pour over pasta, top with chives.
Final Comments
Makes two servings.
