Apple Gingerbread Cobbler

List of Ingredients
- 4 cups sliced apples (pealed and cored)
- 1/2 cup brown sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1 cup water
- 1/4 cup granulated sugar
- 1 egg
- 1/2 cup buttermilk
- 1/4 cup molasses
- 2 tablespoons Canola oil
- 1 cup sifted all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon salt
- 2 teaspoons cornstarch
- 1 tablespoon water
Instructions
- Combine apples, brown sugar, water, lemon juice, and cinnamon in a sauce pan. Cover and cook until apples are almost tender.
- Beat together the granulated sugar, egg, buttermilk, molasses, and oil.
- Stir together the flour, baking soda, baking powder, spices, and salt. Add to egg mixture and beat until smooth.
- Combine cornstarch and 1 tablespoon water. Stir into the apple mixture.
- Pour the apple mixture into a 2-quart casserole. Spoon the gingerbread mixture on top.
- Bake uncovered in a 350 degree oven for 30 minutes or until gingerbread is done. Serves 6 to 8.
