    Cheddar Cheese Tartlets - part 2

    Cheddar Cheese Pastry: Makes enough for 30 tartlets.


    List of Ingredients


    • 1 1/4 cups all purpose flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon cayenne pepper
    • 1 1/4 cups loosely packed grated sharp cheddar cheese (about 4 ounces)
    • 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch pieces
    • 5 teaspoons (about) ice water


    Instructions


    1. Blend flour, salt and cayenne in processor.
    2. Add cheese and butter and process using on/off turns until coarse crumbs form.
    3. Blend in enough water by teaspoonfuls to form small moist clumps.
    4. Gather dough into ball. Flatten into disk.
    5. Wrap in plastic and refrigerate 1 hour.
