Honey Cucumber and Crab Canapes
List of Ingredients
2 medium cucumbers, peeled & cut into 1/2" slices
2 ts. Fresh parsley, chopped
2 TB Soy sauce
2 Tb Balsamic vinegar
1 TB Honey
1/4 ts. White pepper
2 cans (6 oz. @) Crabmeat, drained
Paprika for garnish Recipe
Method: Carefully hollow out a shallow well in each cucumber slice, leaving the bottoms intact. (Can score
the sides of the cucumber with the tines of a fork before slicing, for decorations.)
Combine parsley, soy sauce, vinegar, honey and pepper. Add crab meat; mix thoroughly.
Fill each cucumber slice with crabmeat mixture. Sprinkle with paprika.
