    Sue's OWN Eclectic Chicken

    List of Ingredients

    This is my own recipe. I called this electic cuz it is a combination of three recipes I have and I put them together and made this. IT IS EXCELLENT if I do say so myself!!!!

    6 chicken breasts skinned and boneless
    salt and pepper to taste
    6 strips green pepper (size of a wooden matchstick)
    6 strips red pepper (size of wooden matchstick)
    6 strips zucchini (size of wooden matchstick)
    6 strips yellow squash (size of wooden matchstick)
    6 strips carrot (size of wooden matchstick)
    baby spinach leaves
    toothpicks

    Sauce:
    1/3 cup finely diced red pepper
    1 large jalapeno seeded and finely diced
    1 cup orange marmalade (I used low sugar)
    1/2 cup orange juice
    zest of one lemon plus juice of one lemon
    1 T horseradish
    2 T minced garlic
    2 T grated fresh ginger
    4 T soy sauce

    Mix and set aside.

    Recipe


    Put chicken between two sheets of plastic wrap and flatten out as much as possible without
    putting holes in it. Salt and pepper each piece.

    Lay out one piece of flattened chicken and cover side facing up with a layer of baby spinach
    leaves. Add one piece of each julienned vegetable and roll up chicken. Secure with toothpick
    and put face down in a lightly sprayed casserole dish.

    Pour sauce over top of chicken and cover and put in fridge for 1 hour to let marinate.

    Bake in PREHEATED 375 degree oven (covered) for 30 minutes. Then uncover, baste and
    lightly cover again with foil (just lay foil over top..don't secure it) and let finish baking. About 15
    minutes to another 1/2 hour. I neglected to watch the time but this seems to be right. About 45
    minutes to one hour for stuffed cold chicken.

    Serve with sauce.
