Chicken Fried Rice
List of Ingredients
2 t. veggie oil, divided
2 eggs beaten
3 chopped green onions
1\2 lb. skinned chicken breasts, thinly sliced
1 T. minced gingeroot
1\4 t. crushed red pepper
3 c. cooked white rice, COLD RICE
1 bunch broccoli flowerets
1\2 lb. carrots sliced
1\2 c. chicken broth
3 T. soy sauce
Recipe
With 1 t. oil cook eggs and cut into thin strips....or scramble very fine. Saute onions, chicken, ginger, red pepper in remaining oil for 4 min. Add rice cook 1 min. add remaining ingredients, reduce heat and cover and cook 5-8 min. until veggies are tender. Mix egg into mixture.
