    Cocoa Mayonnaise Cake

    Cocoa Mayonnaise Cake

    1-3/4 cups all-purpose flour
    1 cup sugar
    1/3 cup Cocoa or Dutch Processed Cocoa
    1-1/2 teaspoons baking powder
    1-1/2 teaspoons baking soda
    1/8 teaspoon salt
    1 cup mayonnaise
    1 cup water
    2 teaspoons vanilla extract
    Chocolate Glaze (recipe below)


    Preheat oven to 350°F.

    Grease and flour 13x9x2-inch baking pan or 10-inch tube pan.

    Stir together flour, sugar, cocoa, baking powder, baking soda and salt in large bowl.

    Add mayonnaise, water and vanilla; beat on medium speed 3 minutes.

    Pour batter into prepared pan.

    Bake 40 minutes for rectangular pan or 45 to 50 minutes for tube pan or until wooden pick inserted in center comes out clean.

    Cool 10 minutes; remove from pan.

    Cool completely; frost with Chocolate Glaze.



    Chocolate Glaze

    1/4 cup Cocoa
    3 tablespoons water
    2 tablespoons butter or margarine
    1 tablespoon light corn syrup
    1/2 teaspoon vanilla extract
    1 to 1-1/4 cups powdered sugar


    Combine cocoa, water, butter and corn syrup in small saucepan.

    Cook over low heat, stirring constantly, until mixture thickens; remove from heat.

    Stir in vanilla.

    Gradually add powdered sugar; beat until smooth and thickened.

    About 3/4 cup glaze.
