Buttery Toffee Cookies
Butter Toffee Cookies
½ cup sugar
½ cup butter, softened
1 egg
½ teaspoon vanilla
1 ¼ cups flour
½ teaspoon baking soda
¼ teaspoon salt
4 (1.4-ounce) bars chocolate-coated toffee, chopped *
* you can substitute (6oz) package (1cup) milk chocolate toffee bits
Heat oven to 350
Combine sugar, butter, egg and vanilla. Beat at medium speed, until creamy (3-4 minutes)
Reduce speed to low; and add flour, baking soda and salt. Beat until well mixed (1-2 minutes). Stir in chopped toffee by hand.
Drop by rounded teaspoons onto greased cookie sheets. Bake for 10 – 12 minutes.
