Cookies from my Cyber Bud "Mamasue"
Mamasue, Thanks so much for these cookie recipes they are wonderful! My little ones love them!
Chocolate Crinkles
1 package chocolate cake mix
2 eggs
1/2 cup canola oil
Mix well; roll into walnut size balls and toss into powdered sugar to coat. Bake at 350 degrees for 8-10 minutes.
MamaSue's Chocolate Chip Cookies
2/3 cup shortening
2/3 cup butter, softened
1 cup granulated sugar
1 cup brown sugar (packed)
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
12 ounces (2 pkg.) semisweet chocolate pieces
Heat oven to 375 degrees. Mix thoroughly shortening, butter, sugars, eggs and vanilla. Stir in remaining ingredients. (For softer, rounder cookie, add 1/2 cup flour).
Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake 8 to 10 minutes or until light brown. Cool slightly before removing from baking sheet.
Note: I use butter--margarine never is used in my cookies. I add the extra 1/2 cup flour for softer, rounder cookie and always undercook my cookies by maybe a minute or two. I also never go by the baking time as a rule---just keep my eye on them for lightness of color.
Mamasue's Peanut Butter Cookies
1/2 c. shortening
1/2 c. peanut butter
1/2 c. granulated sugar
1/2 c. brown sugar (packed)
1 egg
1 1/4 c. flour
1/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
Mix thoroughly shortening, peanut butter, granulated sugar, brown sugar and egg. Blend in flour, soda, baking powder and salt. Cover and chill.
Heat oven to 375 degree. Shape dough into 1-inch balls. Place 3 inches apart on lightly greased baking sheet. With fork dipped in flour, flatten in crisscross pattern to 2 inches. Bake 10 to 12 minutes or until light brown.
