    Sandy's Pumpkin Roll

    List of Ingredients




    From My Sister Sandy

    3 Eggs 1 Cup Sugar
    2/3 Cup Pumpkin 1 tsp. Lemon juice
    ¾ Cup Flour 1 tsp. Baking Powder
    ½ tsp. Salt 2 tsp. Cinnamon
    1/2 tsp. Nutmeg 1/2 tsp. Ginger, (if desired)
    1 cup finely chopped walnuts (if desired)

    Filling:
    1 Cup Powdered Sugar ¼ Cup Butter, Softened
    1 (8 oz.) Cream Cheese ½ tsp. Vanilla

    Recipe



    Grease and flour 15 x 10 x 1” pan. Heat oven to 375 degrees. Beat eggs for 5 minutes; gradually add sugar, beating well. Stir in pumpkin and lemon juice. Combine dry ingredients; stir into pumpkin mixture. Spread into prepared pan. Sprinkle with walnuts. Bake 15 minutes.
    Turn out on towel sprinkled with powdered sugar.
    Roll towel and cake together and cool.

    Filling:
    Mix powdered sugar, butter, cream cheese and vanilla; beat together until smooth and fluffy. Unroll cake when cool; remove towel. Spread cake with filling rollup and refrigerate. Cut when cool.
