~Grilled Tilapia~

1 cup vegetable oil
salt
red pepper flakes, cayenne pepper, or African Hot Sauce (to taste)
juice of one lemon
1 onion, finely chopped
1 sweet green pepper (or bell pepper), finely chopped
1 spoonful of vinegar
whole tilapia (one per person), one to two pounds each; cleaned (or
tilapia fillets)
Recipe
Combine all the ingredients in a glass bowl, except the fish. Stir
until well mixed.
Cut three slits across each fish on both sides, rub the oil and spice mix onto and into the fish. Marinate in the bowl for an hour.
Cook the fish over a charcoal fire on the grill (a grill basket would be very helpful), or broil in the oven, turning once or twice for about 30 minutes.
Serve with African Hot Sauce: to follow
