MAKE AHEAD - Combine the ingredients for the gravy up to 2 days ahead. Prepare as recipe directs through step 1. Cover and refrigerate until ready to use.
Step 1: Measure broth in a large measuring cup. Whisk in ketchup, Worcestershire Sauce, mustard and pepper. Set aside.
Step 2: Heat a large nonstick skillet over medium heat. Add steaks; cook until desired on each side. Remove steaks from skillet; cover the steaks and keep them warm. Pour off fat from the skillet.
Step 3: Thinly slice onions. Add butter to skillet and melt over medium heat. Add onions; cook stirring continually, about 3 minutes. Cover; reduce heat to medium low. Cook about 5 minutes longer.
Step 4: Stir in broth mixture into skillet; cook until heated through, about 2 minutes. Pour over steaks. Serve immediately.
NOTE: I make this about once a month. It is very good and I think it could be a good dinner for 2!!
