~Cheese Scones~

Delicious for tea-time or brunch.
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon mustard powder
1/2 teaspoon salt
4 tablespoon butter, chilled and cubed
3 ounces Cheddar cheese, grated
2/3 cups milk
1 egg, beaten
Recipe
1) Preheat oven to 450F. Sift the flour, baking powder, mustard powder and salt into a mixing bowl. Add the butter and rub it into the flour mixture until the mixture resembles bread crumbs. Stir in 2 ounces of the cheese.
2) Make a well in the center and add the milk and egg. Mix gently and then turn the dough out on to a lightly floured surface. Roll it out and cut it into triangles or squares. Brush lightly with milk and sprinkle with the remaining cheese. Let rest for 15 minutes, then bake them for 15 minutes, or until well risen.
