    These are a real tea-time treat. The fingers will keep in an airtight tin for up to two weeks.


    1/2 cup unsalted butter, softened
    4 tablespoon superfine sugar, plus a little extra
    finely grated rind of 2 oranges
    1 1/2 cups all-purpose flour

    Recipe



    1) Preheat the oven to 375F. Beat the butter and sugar together until they are soft and creamy. Beat in the orange rind.

    2) Gradually add the flour and gently pull the dough together to form a soft ball. Roll the dough out on a lightly floured surface until about 1/2 inch thick. Cut it into fingers, sprinkle over a little extra superfine sugar, prick with a fork and bake for about 20 minutes, or until the fingers are a light golden color.
