    1-1/2 tablespoons yeast
    2 tablespoons sugar
    1/4 cup water
    1 cup butter
    4 cup flour
    1/2 tsp salt
    3/4 cup milk
    4 medium eggs

    Mom's Sweet Rolls Directions (also makes great Beignets).


    Put yeast, sugar, and water into a jar with a lid and let stand for 15 minutes.

    Place chilled butter, flour and salt into mixer or food processor and blend until the mixture has the texture of small peas.

    Mix the yeast mixture with the milk and eggs. Add the yeast, egg and milk mixture to the flour and mix/process until the dough forms a soft ball. The dough should be such that it can be handled. If too thin add flour as needed.

    Grease a 3 to 4 quart container add the dough ball and push the dough down. Brush the top of the dough with a little cooking oil and cover slightly. Let the dough rise two to three hours in a warm place. Push the dough back down and refrigerate for three to four hours or overnight.

    Preheat the oven to 450 degrees F.

    Pinch off the dough you need. A softball size ball will make enough rolls for 2 - 3 folks.

    Push down the remanining dough and reseal and refrigerate. The dough will last for one week in the icebox.

    Sprinkle some flour on a dough board. Roll out the dough. Brush with butter. Fold it over and roll out again. Cut out and place in pan. Allow them to rise until they double in size. Bake for 12 minutes or until golden brown.
