    1 medium onion, grated
    2 large (about 14 ounces) potatoes, grated
    1 pound sliced corned beef, finely chopped
    4 eggs, lightly beaten
    1/4 cup chopped fresh parsley
    2 tablespoons (1/4 stick) butter
    2 teaspoons olive oil
    2 large (about 1 pound) tomatoes thickly sliced

    Recipe



    1. Pat onion and potatoes dry with paper towels. Combine onion, potatoes, corned beef, eggs and parsley in bowl; mix well.

    2. Heat butter in 12 inch omelet pan, swirl to coat base and side evenly. Add corned beef mixture, press mixture evenly into pan, cook over low heat about 30 minutes or until underneath is well browned and mixture firm. Place pan under heated broiler, broil until top is set and browned.

    3. Heat oil in large skillet, add tomatoes, cook until browned on both sides. Serve with Frittata.

    Serves: 4 to 6
