~Mushroom Rice~

List of Ingredients
1 cup long-grain rice
nonstick cooking spray
**1 1/2 cups chopped mushrooms (your choice)
1/4 cup chopped scallions
2 tablespoons fresh lemon juice
*1 tablespoon finely chopped fresh marjoram
*1 tablespoon finely chopped fresh parsley
1 teaspoon ground white pepper
1 teaspoon Soul Food Seasoning
SOUL FOOD SEASONING:
1 tablespoon ground red pepper
3 tablespoons garlic powder
5 tablespoons onion powder
1 tablespoon dark chili powder
1 tablespoon paprika
1 teaspoon thyme powder
1 teaspoon freshly ground black pepper
Can be used on vegetables or french fries
Mix all the ingredients together. Store in sealed
container. Makes about 3/4 cupRecipe
Rice:
1-Pour the rice in a saucepan sprayed with nonstick
cooking spray and cook stirring frequently on a low
heat for about3 minutes.
2-Add 3 cups of water and the mushrooms. Cover and
cook for about 20 minutes on a low heat or until all
the liquid has been absorbed and the rice is tender.
3-Stir in the scallions, lemon juice, marjoram, parsley,
white pepper, and Soul Food Seasoning. Let stand,
covered, for 3 to 5 minutes before serving.
Serves 4
*If you don't have fresh herbs, you can use the
pre-packaged.
