I'm very funny about my Potato Salad. A friend of mines made good potato salad, so I combined hers added my own touches and there you have. She even makes hers the same way now. So two good potato salads became one great potato salad.
List of Ingredients
5 lb. red potatoes or white, peeled
2 cups mayonnaise(more or less depending on how you like it)
1 large onion, finely diced (cook onion with potatoes)
2 stalks celery, finely diced
1 carrots, grated or finely diced
6 hard boiled, finely chopped eggs
1 hard boiled egg (for garnish)
1/4 cup yellow mustard
1 teaspoon cider vinegar
1 - 8 ounce jar sweet relish
1 tablespoon sugar (more if needed)
1/2 teaspoon salt
1 tablespoon onion powder
1 teaspoon black pepper
1/2 teaspoon fresh lemon juice
Recipe
Peel potatoes, cut into medium size cubes and boil with onions until just done. DO NOT overcook. Drain in colander and run cold water over potatoes until cool. Drained completely. Mix other ingredients in a large bowl to make a sauce. Adjust seasoning, if necessary. Add potatoes. Mix completely. Garnish with sliced boiled eggs and sprinkle with paprika. Serve chilled.
NOTE: To make this interesting, add 1 cup steamed baby shrimp. Chill the shrimp before adding. If you like your potato salad warm, don't chill the shrimp.
