6 cloves garlic, roasted
2 2/3 lbs large red skinned potatoes, peeled and halved
3 T. chives
3 T. salted butter, softened
1 1/4 t. salt
1/2 t. pepper
1 c. milk
Recipe
Preheat oven to 425º.
To roast garlic: Pull cloves apart into individual cloves, leaving a layer of skin on each. Place 8 cloves on a baking sheet and bake for 12 to 15 minutes or til golden brown; set aside.
Boil potatoes 15 to 20 minutes or til tender; drain. Place cooked potatoes in a mixing bowl. Beat on low speed til no lumps remain. Blend in chives, roasted garlic, butter, salt , pepper and milk. Continue to mix on low speed til well blended.
