~Garlic Parmesan Smashed Potatoes~

4 cloves garlic, halved
1 tablespoon olive oil
2 1/2 pounds red potatoes, quartered
1/4 cup butter, cut into pieces
3/4 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup hot milk
Recipe
1) Saute' garlic cloves in hot oil in a large saucepan over meduim heat until golden.
2) Add potatoes and water to cover. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until potato is tender. Drain, discarding garlic. Add butter and next 3 ingredients to potatoes.
3) Beat at medium speed of an electric mixer until fluffy, gradually adding milk. (Do Not Overbeat.) Add additional milk, if desired, for creamier potatoes. You can also add more butter. I do.
