~Maple Glazed Sweet Potatoes~

All Natural PAM Cooking Spray
2 1/2 lbs sweet potatoes*
1/2 stick butter
1/2 cup maple syrup
2 tablespoons brown sugar
2 tablespoons flaked coconut
1/3 cup chopped pecans
1 1/2 cup minature marshmallows
Recipe
In 3-quart saucepan, place sweet potatoes and cover with water, heat to boiling. Reduce heat; cover and simmer 25 to 30 minutes until tender. Drain potatoes and cool slightly. Peel and cut into chunks; place in 8x8x2 inch baking dish that has been sprayed with Pam.
Preheat oven to 350 degrees. In small saucepan, melt butter; stir in syrup, sugar and coconut. Over low heat, cook, stirring, 3 to 5 minutes until blended.
Sprinkle nuts over sweet potatoes then top with syrup mixture. Bake 25 minutes.
Top with marshmallows; bake 5 to 7 minutes until marshmallows are lightly browned. A great side-dish with ham or turkey.
MAKES 6 TO 8 SERVINGS.
*1 can (40 ozs.) sweet potatoes, drained, may be
substituted for cooked sweet potatoes
