~Stuffed Sweet Potatoes ~

List of Ingredients
4 lbs sweet potatoes
1/4 c. unslated butter1/4 sugar
3/4 t. pure vanilla extract
3/4 t. ground cinnamon
1/2 t. ground nutmeg
Topping:
3 T. peacans, roughly chopped
1/4 c. raisins
1/2 c. red or green apple, peeled, cored and diced
1/2 c. pears. peeled, cored and diced
1/2 c. mandarin orange sections, drained
Preheat oven to 375º.
Recipe
With a fork, poke sweet potatoes four times and bake for 1 1/4 hours or til very soft. Toast chopped pecans on a small baking sheet in the same oven for about 7 minutes or til lightly browned; set aside. Cut potatoes in half lengthwise and let cool for 15 minutes. Using a tablespoon, scoop out the insides leaving about 1/4 inch of potato intact. Using a potato masher, mash insides of potatoes in a bowl, add butter, sugar, vanilla, cinnamon and nutmeg. Mix together until blended. Scoop mixture back into skins. In a small bowl combine raisins, apples, pears, orange sections and pecans. Top each potato with mix. Return to 350º oven for 15 minutes to warm.
