~Herbed Green Beans with Lemon~

1/2 Tablespoon olive oil
2 1/2 teaspoon garlic, minced
1 1/4 teaspoon paprika
1/4 cup fresh parsely, chopped
1/4 cup fresh cilantro, chopped
1/2 teaspoon pepper
2 lbs fresh whole green beans
1 lemon
In a medium saucepan over me-lo heat, add olive oil and saute garlic of 3 minutes. Stir in paprika, parsely, cilantro and pepper; set aside. Boil green beans in water for 3 to 5 minutes. Immediately cool green beans under cold water til they are cool to touch. Toss beans in a bowl with herb mixture and coat evenly. Refrigerate green beans for 1 hour prior to serving. Peel a lemon with a vegetable peeler, only removing the outer yell skin. Cut rind into long thin strips and garnish green beans to taste.
