Spicy Green Beans with Purple Onions

2 lbs green beans, trimmed*
1/4 cup olive oil
1 Tsp lemon juice
1 tsp sugar
1 tsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper
2 Tsp chopped red bell pepper
2 Tsp sliced water chestnuts
1/2 cup diced purple onion
Recipe
Cook green beans in boiling salted water to cover 5 mins. or until crisp-tender; drain. Plunge into ice water to stop cooking process; drain.
Whisk together oil & next 5 ingredients in a large bowl. Add green beans, bell pepper, water chestnuts & onions; toss well to coat.
Cover & chill 8 hrs before serving.
Yld: 6 servings.
*Substitute 2 (9 oz) pkgs froze whole green beans (cooked according to pkg directions) for fresh green beans, if desired.
